Sweet Fruit Desserts
Microwave Stewed Apple Recipe for Two
Ingredients:
2 thinly sliced, cored apples (I used Gala, since I had some in the fridge. Use what you have. Just leave the skins on.)
1 teaspoon butter
1 tablespoon coconut oil
1 teaspoon maple balsamic vinegar
1 tablespoon agave nectar
1 tablespoon brown sugar
Cinnamon
Method:
In a large flat-bottomed bowl, a serving bowl works well, add the butter and coconut oil. Melt the fats in the microwave. Remove from the microwave and stir in the maple balsamic vinegar, agave nectar, and brown sugar. Stir well.
Add the sliced apples. Mix them well with the seasonings. Even the apples out and sprinkle them lightly with cinnamon. Cover the bowl and microwave on high for 2 ½ minutes. Let the apples stand, covered, for 10 minutes. Place in small bowls and spoon the sauce over the apples.

Tropical Frosted Shake for Two
Ingredients:
½ - ¾ cup frozen pineapple chunks
½ cup frozen mango chunks
1 cup banana chunks or 1 peeled medium banana
½ cup Greek yogurt
1 peeled Clementine or ¼ cup of orange slices
1 cup milk (For a richer flavor, substitute ¼ cup evaporated milk for ¼ cup of the milk.)
2 tablespoons honey or agave nectar (optional)
1 tablespoon vanilla malt powder (optional)
1/8 teaspoon salt (optional)
You can also add protein powder for a heartier dessert!
Method:
Add all ingredients in the blender bowl of a Vitamix or other blender. Blend until smooth. If you do not have a Vitamix, you might have to blend the ingredients in batches.
Simple Blueberry and Yogurt Dessert:
Place ½ cup blueberries per serving in small individual serving dishes. Dollop plain Fage Greek Yogurt on top of the berries and smooth it to the edge of the serving dish. Sprinkle 1-3 teaspoons of dark brown sugar over the yogurt. Serve chilled.
You may also make a blueberry and yogurt parfait. In a parfait glass, add blueberries, dollop with Greek yogurt, sprinkle the yogurt with dark brown sugar, add more blueberries, and continue layering until the parfait glass is full. Finish with the yogurt and a sprinkle of brown sugar. Use some different fruits along with your blueberries to make a colorful and tasty dessert.
